How to Make Brown Butter

Brown Butter is THE secret ingredient when it comes to taking your food up a notch.

Substituting this golden, magical, ingredient into your recipes, will take something from good to "OMG." The best part about this is it doesn't require anything other than the butter your recipe originally called for and a skillet.

While brown butter has taken my baking to a completely different level, this game-changing method can be used in many different recipes. Some of my favorites include alfredo sauce, in cookies, in soups, drizzling over veggies-especially carrots, over pasta, over seafood, steak, etc. This little secret MAKES a recipe.

How to Make Brown Butter

1. Cut up butter into several even pieces and add to a light colored skillet. A light colored surface allows you to see better see the butter as the color starts changing.
2. Heat the butter over medium-low heat (low for beginners)
3. As butter begins to heat, it will sizzle and become foamy. Stir the butter often as it cooks.
4. Butter proteins will begin to settle at the bottom of the skillet and after a couple minutes, the solids will begin to get some color. Once you see this SLIGHTLY golden color, pay attention because it will start to develop quickly.
5. Because the color develops so quickly, you will want to continuously stir to prevent any hot spots or brown the butter unevenly.
6. I prefer a deep golden brown (like caramel) because it really brings out a nutty taste in the butter. This is about 4-5 minutes of stirring.
7. Once butter is browned, transfer from skillet to a container immediately. Put in fridge if recipe calls for the butter cooled, solid, or softened.
