One Skillet Chicken Sausage and Sweet Potato Bowl

if you're looking for a delicious and nutritious meal that is ready in under 30 minutes, look no further.



This bowl is full of protein, tons of plant nutrients, and filled with flavor. It's gluten, dairy, and soy free and can easily be made vegetarian! My favorite thing about this flavor-packed Chicken Sausage and Sweet Potato Bowl is how light, yet surprisingly, very filling it is. [of course, it helps that it cooks up in one skillet and has relatively no clean-up.]

This colorful bowl is packed with nutrients and is perfect for any meal of the day. I ran across an apple chicken sausage one day during a [dreadful diet] shopping trip and had no idea what to pair it with sans bun, so I decided to throw all of my favorite veggies together and it was a hit! I make this meal ALL the time now, whether we're doing The 30 Days to Healthy Living, watching what we're eating in general, or whenever I need to throw something together quickly! I like to try different kinds of chicken or turkey sausage in this meal to change it up like, sundried tomato, Italian, breakfast turkey, etc. and often like to add black beans, brown rice, and fresh avocado slices on top.


This simple dish is loaded with nutrients. 

It makes meal planning so simple when I keep my favorite ingredients on hand and have some quick and healthy recipes on which we can always rely. For me, those ingredients include: sweet potatoes, bell peppers, onions, mushrooms, spinach, asparagus, and eggs. Spinach is great for magnesium, energy metabolism, and maintaining healthy blood pressure. Immune boosting Bell Peppers aids in digestive health. Asparagus (my all time favorite) is packed with B vitamins, improves skin, hair, immune, and digestive health, and aids in fertility for women. Low calorie onions pack on flavor and are loaded with antioxidants and nutrients.  Eggs provide protein, help maintain strong muscles and assists with healthy brain function. Mushrooms are high in iron and low in calories, and provide lean protein, Vitamins B and D, and are a great source of fiber and selenium, which plays an important role in immune health and bladder function.

(You may come to realize that a lot of my dishes are made up of similar ingredients, which makes them great for meal prepping and keeping a clean, affordable, and easy daily diet. What you'll need to feed 4 people:

  • 1 package cooked chicken sausage cut into bite sized pieces
  • 4 medium sized sweet potatoes cut into bite sized cubes
  • 1/2 red bell pepper sliced
  • 1/2 green bell pepper sliced
  • 1/2 yellow bell pepper sliced
  • 1 onion chopped
  • 3 handfuls of fresh spinach finely chopped
  • 7 mushrooms sliced
  • 5 spears of asparagus cut into 1 inch pieces
  • 2 tablespoons of garlic minced
  • 1 egg x bowl
  • avocado oil
  • salt and pepper to taste

Instructions

  1.  Wash and dry all your veggies. 
  2. Cut chicken sausage and sweet potatoes.
  3. Drizzle avocado oil in large skillet and cook chicken sausage on medium-high for 4 minutes on each side being careful not to burn sausage.
  4. Chop onions and slice mushrooms while chicken cooks.
  5. Remove chicken sausage from heat and set aside.
  6.  Using the same skillet, drizzle a little more avocado oil and sauté onions, mushrooms, and sweet potatoes for about 10 minutes. 
  7. While potatoes are cooking, cut bell peppers and asparagus.
  8.  Add in bell peppers and garlic and saute for another 5 minutes.
  9.  Add asparagus and spinach to skillet, and cook for about 5 minutes.
  10.  Dish up all veggies into their bowls.
  11. Using the same skillet, drizzle oil, and fry eggs. Place egg over veggies in each bowl.
  12. EAT.
